4 slices bacon, chopped
1/2 medium chopped onion
1/4 cup mushroom
2 tbsp. garlic butter
1 cup light cream
1/2 cup shredded Cheddar cheese (2 oz)
Cooked Capelli D'Angelo or any cooked pasta
Seasoning:
1/2 tsp. black pepper (or to taste)
Grated Parmesan cheese & parsley flakes
1. In skillet, melt butter and cook bacon over medium-high heat, stirring frequently, until crisp.
2. Reduce heat to medium heat, add onion and cook 2 to 3 minutes, stirring occasionally.
3. Add mushroom and cook a minute; Add cream and heat until mixture just starts to bubble.
4. Stir in grated cheese, a little at a time, until it is all melted. Season to taste and reduce heat.
5. Simmer for 5 minutes, until desired thickness is reached. Served over Capelli D'Angelo.
6. Before serving, sprinkle with grated Parmesan cheese and parsley flakes on top of pasta
Tips
Substitution: Many vegetable will work in this recipe, like asparagus, spinach, frozen mixed vegetables, etc.
